Tequila Galán Silver is a 100% blue Weber agave tequila from NOM 1459 in the Tequila Valley, the lowland side of Jalisco where the agave grows in darker volcanic soil and tends to give earthier, more mineral spirits than the highlands. It is produced the conventional way: the piñas are cooked in stone and brick ovens rather than autoclaves, crushed on a roller mill, fermented in stainless steel tanks with the fibers removed, then distilled twice in a stainless steel pot still and proofed with natural spring water to 40% ABV. The silver is unaged, so what is in the glass is the cooked agave and the valley terroir with nothing from a barrel on top of it. Galán does not publish its own tasting notes, but Tequila Matchmaker reviewers find cooked agave, lime, minerality, florals and a jalapeño-pepper edge on the nose, with cooked agave, natural sweetness, citrus, black pepper and fruit on a creamy palate and a long, spicy finish.
