Gum syrup, gomme in the old French bar books, is sugar syrup with gum arabic worked into it, the resin from the acacia tree that nineteenth-century bartenders used and later generations abandoned because it is a pain to dissolve. The gum adds viscosity, so a drink made with it is noticeably more mouth-filling and silkier than one made with plain simple syrup, which is why the classic Sazerac, Old Fashioned and sours of that era call for it. Colliau makes hers with organic cane sugar, and because that sugar is less refined the syrup runs brown, with a rich, caramel character that Drinkhacker noted carries through to the finished drink and gave an A- rating. It is vegan and gluten-free; keep it capped and refrigerated after opening and it holds for a couple of months.
